Camping is about getting away from the everyday madness and carving out some time to just chill. That’s why you don’t want to be doing more chores at the campsite than you do at home. Your trusty crockpot can come to the rescue with these tasty one-dish meals. And afterward, there is only one pan to wash.
French Dip Sandwiches
First you’ll sear it on both sides and then you’ll be putting a 3 lb. beef chuck roast in the crockpot along with some minced onions, garlic, oregano, onion powder, thyme, and salt & pepper. Cook it low and slow for several hours. You’ll be slicing this roast thinly and adding the slices back to the pot to finish cooking. Once done, pile some fresh Hoagie rolls with the beef and provolone cheese. Chicken Parmesan Pasta
Everyone loves pasta so it’s a good meal to serve when you’re camping. You’ll start with 4 boneless, skinless chicken breasts placed in the bottom of the slow cooker. In a separate bowl, mix crushed tomatoes, red pepper, basil, and oregano. Pour this over the chicken and cook it all on low for about 4 hours. Then you’ll pull the chicken out and shred it with a couple of forks. Add it back in along with your cooked pasta and give it another half hour or so to cook. Cashew Chicken
You won’t miss take-out when you can cook this delicious dish for yourself when you’re camping. Start with boneless, skinless chicken breasts which have been shaken in a zip bag of cornstarch and pepper. Brown them quickly in a skillet and then put them in the crockpot. Now you’ll combine soy sauce, vinegar, ketchup, sweet chili sauce, sugar, garlic, ginger, pepper flakes, and cashews in a bowl. Pour this over the chicken and cook the whole thing on low for 3 or 4 hours. Serve it over rice to what soon will be your raving fan club. The family will ask for it time and time again.
